The Origins of National Cuisine

The nutritious Turkmen dishes, easy to prepare, but delicious in taste, are well known. The Turkmen people cook many of their most favourite dishes from meat, flour and dairy products. Their composition and secrets came from ancient times, and the main ingredients were part of the nutritional diet of the people who lived at the foothills of the Kopetdag Mountains back in the Neolithic period. For example, the dish yarma, which is made from lamb and cracked wheat, a compulsory attribute of the traditional Turkmen food, most likely has millennia-old roots and, possibly, was included in the diet of the first farmers in the territory of Turkmenistan. At the turn of the VII-VI millennia BC, the first culture that can be rightly called producing emerged in the foothill zone of the Kopetdag ridge. It was founded by ancient farmers and pastoralists, whose settlements stretched from Bami in the west to Myane in the east. Scientists associate its emergence with the onset of a favourable warm and humid climatic period. It received its name from the settlement of Jeytun, located to the northwest of Ashgabat. Its monuments were well studied and described in the works by Academician V.M. Masson, the publication of which gave it worldwide fame as the earliest sedentary culture in Central Asia associated with the cultivation of land and the domestication of animals.
